Cucumbers with Sweet and Spiced Tahini Dip

Cucumbers are one of the easiest foods to keep on hand when you want something fresh, crisp and hydrating.
They do not require much preparation, they pair well with both sweet and savory flavors, and they can be served as a snack, side dish or simple addition to a summer meal.
This recipe combines cool cucumber slices with a creamy tahini dip made with fresh citrus, honey and a small amount of spice. The result is slightly sweet, a little tangy and just warm enough from the cumin and cayenne to keep it interesting.
It is simple enough to make in about ten minutes, but it still feels special enough to bring to a picnic, cookout or gathering.
Why Cucumbers Are a Great Summer Food
Cucumbers contain a high amount of water, which makes them especially refreshing during warmer weather. They can be helpful when you want to add more hydrating foods to your day without relying only on drinks.

Cucumbers with Sweet and Spiced Tahini Dip
Prep time: 10 minutes
Serves: 4 as a snack or side dish
Ingredients
2 English cucumbers or 5 to 6 Persian cucumbers
2 tablespoons sesame tahini
2 tablespoons freshly squeezed lemon or lime juice
2 tablespoons local, raw, unfiltered honey
⅛ teaspoon ground cumin
⅛ teaspoon cayenne pepper
⅛ teaspoon garlic powder
Dash of black pepper
1 to 2 teaspoons warm water, only if needed
Instructions
Wash the cucumbers and slice them into approximately ¼-inch rounds.
Arrange the cucumber slices on a large plate or serving platter.
Add the tahini, lemon or lime juice and honey to a small bowl. Whisk until combined. The tahini may thicken at first when you add the citrus juice. Continue whisking until it begins to smooth out.
Add the cumin, cayenne, garlic powder and black pepper. Whisk again.
For a thinner dipping consistency, add warm water one teaspoon at a time until the dip is as creamy as you would like.
Place the dip in the center of the cucumber platter and serve immediately.
Michelle’s Notes
Start with a level ⅛ teaspoon of cayenne if you are sensitive to heat. You can always add more after tasting.
The dip can be prepared up to three days in advance and kept covered in the refrigerator. Stir it well before serving and add a small amount of water if it becomes too thick.
